So I get how to install an app.. But where is the app located for me to actually use it?

cydia apps are not like app store apps: they typically wont' install an icon on your springboard. Some cydia tweaks like FakeClockUp will add a new entry to your settings app so you can configure the options the way you want them. Other tweaks, such as DateCarrier, simply make a specific change to your device (replacing your carrier logo with today's date, in this case) and don't add anything else at all. A few (like Pandora Download and iBlacklist) do add proper app icons to your springboard, but that's the exception rather than the rule.
