Free iPad iPhone iPod Touch Jailbreak Support > No restore option on itunes

I have tethered jaibreak iphone 4 on 5.1 and 04.11.08. I also put on the Hsiri app from Cydia(which does not work)"can't connect to the system" etc. But now when I connect to itunes I do not have the option to RESTORE. Any help on this please?
