At present I have a jailbroken iphone 4s ios 5.0.1 untethered.
What is the best way to Update to 5.1.1 and Jailbreak untethered?

Also my Girlfriend want to update her iphone 3gs to 5.1.1 and jailbreak (untethered)

Luke made a video for this very thing, and it was a big help for me. By the way thanks, Luke! I had issues with pkgbackup and gave up (backup was fine, but the app refused to load after jailbreaking/reinstalling), but the video was a big help.
