Free iPad iPhone iPod Touch Jailbreak Support > Dfu mode?

I have an itouch 4g 5.1.1.
I have a lot of apps and media and was wondering if I could enter dfu mode before jailbreaking and still have it all do I would not have to restore afterward. Even if I do have to restore after do I just restore from my last backup and if so are there instructions for this?
Additionally, I can hook up to wifi if necessary but is it possible if I allready have the program to jailbreak without Internet?

Simply backup with ICloud and restore. Everything will be added back to your device,
