1. Backup your device (through iCloud or itunes)
2. reset phone to default settings in itunes
3. restore from backup

You now have all of your stuff back, but the device will no longer be jailbroken. I

('m not sure what you meant by "without to update it", but you really have no choice but to restore to default settings in order to remove the jailbreak).
