Two suggestions:
1) be patient. It can take a long time if you have a lit of data on your device. Don't just assume it won't work.
2) if that doesn't help: do an iTunes backup of your device, erase all content and settings from the ipad itself, then jailbreak, and only after the jailbreak is finished restore your iTunes backup. Jailbreaks are pretty universally smoother on fresh installs, so it's definitely worth a shot.

On the MAC goes to the point of "Restore in Progress" at the end up failing
On the Win7 the asinthe just end up stop working
