how i can update to ios 5 and jailbreak it without something will be change or remove from my iphone

Backup all of your stuff (hit sync). Then hit the restore button in iTunes. This will update you to iOS5.

but if i restore all the things on my iPhone will be deleted
u mean I need to backup then restore and then restore from backup and then i jailbreak?
