When im done holding down the buttons my ipod restarts normaly after like 5 seconds what am i doing wrong can you help?

Yes i did and after it just restarts normally and on the redsnow thing it just says waiting for reboot but doesnt do anything

It's all about timing. Try a few more times. You could also try using a different computer.
